Makes 2 loaves
Ingredients
- 3 - eggs
- 2 cups sugar
- 1 cup oil
- 2 cups grated zucchini
- 2 1/2 cans all-purpose flour
- 1/2 cup coconut
- 2 teaspoons bakong soda
- 1/2 teaspoon baking powder
- 1 teaspoon cinnamon
- 2 teaspoons vanilla
- 1/2 cup chopped pecans
- 1/2 cup drained crushed pineapple
How To Make zucchini nut bread

Step 1Cream together sugar, oil and eggs. Add sifted dry ingredients. Stir in zucchini, nuts, pineapple, coconut and vanilla. Bake 1 hour at 325 degrees in 2 greased and floured loaf pans. Makes 2 loaves.
