Ingredients

  • 2 c
    all purpose flour
  • 1/2 tsp
    bakind powder
  • 1/2 tsp
    baking soda
  • 1 1/2 tsp
    cinnamon
  • 1 1/2 c
    white sugar
  • 3
    eggs
  • 1 c
    vegetable oil
  • 2 c
    grated zucchini
  • 1/2 c
    each of nuts and golden raisins
  • 2 Tbsp
    grated lemon rind and juice

How to Make Zucchini Bread

Step-by-Step

  1. grease 2 ...9inch loaf pans turn on oven to 350 degrees
  2. grate the zucchini..beat together sugar and oil until light and fluffy..combine dry ingredients..add to egg mix.. add zest and juice and beat til well combined..mix in nuts raisins and zucchini
  3. pour into greased loaf pans bake for 45 to 50 minutes snd test with toothpick..if clean the bread is ready remove from oven cool in pans for 10 minutes,,remove from pans and cool on wire rack....freezes well..nice with cream cheese spread on slice...
