Every year my nephew makes sure he brings me lots of zucchini so that I will make him this bread. It's really good. Everyone loves it.

3 c
all purpose flour
1 tsp
1 tsp
baking soda
1 tsp
baking powder
3 tsp
ground cinnamon
1 c
vegetable oil
2 1/4 c
3 tsp
vanilla extract
2 c
zucchini, grated with a cheese grater
1 c
pecans, chopped

How to Make Zucchini Bread


  • 1Preheat oven to 325 degrees. Then grease and flour 2 loaf pans.
  • 2Mix well - flour, salt, baking powder, baking soda & cinnamon in a bowl. In a seperate bowl beat the eggs slightly and add oil, vanilla, & sugar. Add the dry ingredients to the creamed mixture and beat well. Stir in zucchini & nuts until well combined. Pour batter into prepared pans.
  • 3Bake 40 - 60 minutes or til toothpick comes out clean. Cool 20 minutes & remove from pan. Cool completely.
