Every year my nephew makes sure he brings me lots of zucchini so that I will make him this bread. It's really good. Everyone loves it.

Ingredients
- 3 cups all purpose flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 3 teaspoons ground cinnamon
- 3 - eggs
- 1 cup vegetable oil
- 2 1/4 cups sugar
- 3 teaspoons vanilla extract
- 2 cups zucchini, grated with a cheese grater
- 1 cup pecans, chopped
How To Make zucchini bread

Step 1Preheat oven to 325 degrees. Then grease and flour 2 loaf pans.

Step 2Mix well - flour, salt, baking powder, baking soda & cinnamon in a bowl. In a seperate bowl beat the eggs slightly and add oil, vanilla, & sugar. Add the dry ingredients to the creamed mixture and beat well. Stir in zucchini & nuts until well combined. Pour batter into prepared pans.

Step 3Bake 40 - 60 minutes or til toothpick comes out clean. Cool 20 minutes & remove from pan. Cool completely.
