Every year my nephew makes sure he brings me lots of zucchini so that I will make him this bread. It's really good. Everyone loves it.

  • 3 c
    all purpose flour
  • 1 tsp
  • 1 tsp
    baking soda
  • 1 tsp
    baking powder
  • 3 tsp
    ground cinnamon
  • 3
  • 1 c
    vegetable oil
  • 2 1/4 c
  • 3 tsp
    vanilla extract
  • 2 c
    zucchini, grated with a cheese grater
  • 1 c
    pecans, chopped

How to Make Zucchini Bread


  1. Preheat oven to 325 degrees. Then grease and flour 2 loaf pans.
  2. Mix well - flour, salt, baking powder, baking soda & cinnamon in a bowl. In a seperate bowl beat the eggs slightly and add oil, vanilla, & sugar. Add the dry ingredients to the creamed mixture and beat well. Stir in zucchini & nuts until well combined. Pour batter into prepared pans.
  3. Bake 40 - 60 minutes or til toothpick comes out clean. Cool 20 minutes & remove from pan. Cool completely.
