zucchini bread

Years ago I worked as a ward clerk in the hospital...afternoon shift. I got this recipe from one of the nurses...it sooo very good and moist. When my kids were young I used to use 2 cups unbleached flour and 1 cup whole wheat flour...just to be a little healthier. It still tasted great.

Ingredients
- 3 - eggs
- 2 cups sugar, i prefer cane sugar for baking
- 2 cups or 3 medium shredded zucchini
- 1 cup canola oil
- 2 teaspoons pure vanilla extract
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 2 teaspoons cinnamon, ground
- 1/2 teaspoon nutmeg, freshly grated is nice
- 1/4 teaspoon cloves, ground
- 3 cups unbleached white flour
- 1/2 cup chopped walnuts or pecans
How To Make zucchini bread

Step 1Heat the oven to 325 degrees F.

Step 2Grease (not oil), bottoms only of 2 bread pans.

Step 3In a large bowl beat eggs until foamy, stir in sugar, zucchini, oil and vanilla.

Step 4Add dry ingredients and mix well. Add nuts.

Step 5Pour into pans. Bake for 50 - 60 minutes until toothpick comes out clean. Cool 10 minutes, turn out onto wire racks. Enjoy

Step 6High Altitude: 5000 ft - reduce soda to 3/4 tsp.
