Years ago I worked as a ward clerk in the hospital...afternoon shift. I got this recipe from one of the nurses...it sooo very good and moist. When my kids were young I used to use 2 cups unbleached flour and 1 cup whole wheat flour...just to be a little healthier. It still tasted great.

  • 3
  • 2 c
    sugar, i prefer cane sugar for baking
  • 2 c
    or 3 medium shredded zucchini
  • 1 c
    canola oil
  • 2 tsp
    pure vanilla extract
  • 1 tsp
  • 1 tsp
    baking soda
  • 1 tsp
    baking powder
  • 2 tsp
    cinnamon, ground
  • 1/2 tsp
    nutmeg, freshly grated is nice
  • 1/4 tsp
    cloves, ground
  • 3 c
    unbleached white flour
  • 1/2 c
    chopped walnuts or pecans

How to Make Zucchini Bread


  1. Heat the oven to 325 degrees F.
  2. Grease (not oil), bottoms only of 2 bread pans.
  3. In a large bowl beat eggs until foamy, stir in sugar, zucchini, oil and vanilla.
  4. Add dry ingredients and mix well. Add nuts.
  5. Pour into pans. Bake for 50 - 60 minutes until toothpick comes out clean. Cool 10 minutes, turn out onto wire racks. Enjoy
  6. High Altitude: 5000 ft - reduce soda to 3/4 tsp.
