Loaded with bananas, pineapple, coconut and nuts, this quick bread is flavorful and delicious. Great with coffee at breakfast ro serve for desert.

Ingredients

  • 2 cups all purpose white flour
  • 1 cup granulated sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup butter, softened
  • 2 large eggs
  • 1/4 cup milk
  • 1 cup bananas, mashed
  • 1 tablespoon orange rind, grated
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 1 cup flaked coconut
  • 1/2 cup pecans, chopped
  • 1/2 cup pineapple, drained

How To Make tropical paradise quick bread

  • Step 1
    Preheat overn to 350 degrees
  • Step 2
    Grease bottom of 5x9 loaf pan
  • Step 3
    In a large mixing bowl, combine flour, sugar, baking soda and salt.
  • Step 4
    Stir in butter, eggs, milk, banans,coconut, pineapple, orange rind, vanilla extract and almond extract.
  • Step 5
    Beat on low speed until all ingredients are moistened.
  • Step 6
    Beat at medium speed for 2 minutes.
  • Step 7
    Stir in Pineapple and coconut.
  • Step 8
    Pour into a prepared pan and bake for 70 minutes or until a wooden toothpick comes out clean when inserted into the center of the bread.
  • Step 9
    When ready, immediately remove the bread from the pan an onto a plate.
  • Step 10
    Cool completely before slicing.
