taste of home’s banana bread-slimmed down

My mom and aunt lived with us for awhile and they both loved banana bread, but we had trouble finding one that we liked. This is one of many that Taste of Home has published over the years and we found that it was the best, at least for us. Because of being diabetic and all of us needing to eat healthier I took the basic recipe and tweaked it until I came up with this version that would work for all of us in the family.

Ingredients
- 1 cup splenda
- 3 large eggs
- 2 cups mashed ripe bananas (about 5 medium)
- 1 cup unsweetened applesauce
- 1 teaspoon vanilla
- 1 1/3 cups all purpose flour
- 2/3 cup whole wheat flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup chopped nuts, i use pacans, but walnuts are also good.

Step 1In a mixing bowl, beat the sugar and eggs together until light and fluffy. Stir in the bananas, applesauce and vanilla. Combine the flours, baking soda and salt; stir into banana mixture just until moistened. Add nuts.

Step 2Pour into a loaf pan that has been sprayed with cooking spray. Bake at 325 degrees 60 to 75 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack.
