succulent banana bread
The richest, moistest and most flavorful recipe I have tried.. worth the efforts. Kids LOVE this. This freezes well also. Last 2 loaves I wrapped one in foil after removing from the pan. A month later thawed and it was still just as moist and yummy.

Ingredients
- 1 2/3 cups all purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1 cup + 2 tbls. sugar
- 2 - eggs
- 1/2 cup oil
- 3 1/2 - large very ripe bananas , mashed
- 2 tablespoons creme fraiche or sour cream
- 1 teaspoon vanilla extract
- 2/3 cup walnuts, pecans , other nut of choice

Step 1preheat oven 350 F . Grease bottom of pan or line with parchment papater

Step 2sift together.. flour, baking soda, cinnamon, and salt

Step 3beat sugar and eggs with whisk until light and fluffy (10 minutes ) should be smooth and glossy

Step 4drizzle oil into sugar / egg mix , whisk well..then add mashed banana, creme fraiche and vanilla. fold in dry ingredients and nuts . Pour into prepared loaf pan and bake for 45 - 1 hour
