This banana bread recipe was in The Best of Country Cooking Coobook. It is really good with pecans in the bread and in the topping.

Ingredients

  • 1/2 cup butter-flavored shortening
  • 1 1/2 cups sugar
  • 2 - eggs
  • 1 cup mashed ripe bananas (about 2 medium)
  • 1 teaspoon pure vanilla extract
  • 2 cups self rising flour*
  • 1/2 cup buttermilk
  • 3/4 cup chopped pecans

How To Make southern banana nut bread

  • Step 1
    In a mixing bowl, cream shortening and sugar; beat in eggs.
  • Step 2
    Blend in bananas and vanilla.
  • Step 3
    Add flour alternately with buttermilk,
  • Step 4
    Fold in pecans.
  • Step 5
    Pour into two greased 8-inch x 4-inch x 2-inch loaf pans
  • Step 6
    For topping combine 1/4 to 1/3 cup mashed ripe bananas, 1 1/4 cups confectioners sugar and 1 teaspoon lemon juice; spread over loaves, Sprinkle additional chopped pecans.
  • Step 7
    *Editor's Note: As a substitute for each cup of self-rising flour, place 1 1/2 teaspoons baking powder and 1/2 teaspoon salt in a measuring cup; add all-purpose flour to equal 1 cup.
