slender orange clove scones
I've combined ingredients and method from different recipes, and this is a scone recipe that works for me; it produces a slender, finger-friendly scone that is easy to eat (easy for kids to pick up and hold like a pizza!) that is very flavorful. Note: for pretty-on-a-plate presentation, melt 1/2 cup brown sugar with 3 Tbs. water in microwave and drizzle over scones.

Ingredients
- 1 3/4 cups flour
- 3 tablespoons sugar
- 1 tablespoon flavored coffee creamer powder (i use coffee mate parisian almond creme)
- 3 - zest of 3 oranges
- 1 1/2 teaspoons ground cloves
- 1/2 teaspoon salt
- 1 stick unsalted butter (very cold - put in freezer)
- 1/2 cup buttermilk
- 2 - eggs
- 1 teaspoon vanilla
- 1/4 cup shortening
How To Make slender orange clove scones
-
Step 1Place stick of butter in the freezer.
-
Step 2Mix dry ingredients in a bowl (including zest); set aside.
-
Step 3Mix wet ingredients (reserve one of the eggs to the side) in separate bowl.
-
Step 4With flowered fingers, pinch shortening into little balls and drop into dry ingredients.
-
Step 5Working quickly, grate your very cold butter into the dry ingredients.
-
Step 6Pour in wet ingredients and mix gently with spatula; do not overmix or your scone will come out very heavy. You will end up with a crumbly mixture...not very cohesive at all.
-
Step 7Turn your crumbly mixture onto floured surface and fold gently with flowered hands, using your fingers to shape and pat it into a flat ball, about 1/8 inch thick.
-
Step 8Cut into wedges using a pizza cutter.
-
Step 9Beat your leftover egg. Brush wedge tops with beaten egg. Sprinkle tops with sugar. Bake wedges in a buttered casserole pan 15-20 minutes until tops are golden.
