I suffer from Reflux and love the taste of certain bread, but also have heartburn afterwards. So I have looked on the web and found several kinds. I tinkered with the recipe several times and came up with a version that works well with me.. Hope you try it out and enjoy it as much as I do..

Ingredients For reflux friendly banana bread

  • 1 1/2 c
    all purpose flour
  • 1 /2 tsp
    baking soda
  • 1 1/4 tsp
    baking powder
  • 1/8 tsp
    salt
  • 1/4 tsp
    cinnamon
  • 1 c
    mashed banana
  • 1/4 c
    vegetable oil
  • 2
    slightly beaten egg whites
  • 1/4 c
    splenda
  • non stick spray

How To Make reflux friendly banana bread

  • 1
    •Blend together flour, baking powder, baking soda, cinnamon, and salt in a medium mixing bowl. •Blend together beaten egg whites, banana, sugar, and oil in a large mixing bowl. •Stir in flour mixture into the banana mixture, blending only until flour mixture is moistened. •Spray an 8x4x2-inch loaf pan with nonstick cooking spray. Spread batter in prepared pan. •Bake in a 350 degree F oven for 45 to 50 minutes or until a toothpick inserted near the center comes out clean. •Cool bread in the pan for approximately 10 minutes, then remove bread from pan and cool it thoroughly on a wire rack.
