quick & easy banana nut bread
This is a good quick bread that I have made since 1967 when I was a newly wed. I had never had homemade quick breads before that time and an Army Wife introduced me to them and the rest is history. I always wait until my bananas are heavily speckled so they are soft and sweet. Great for breakfast or as a dessert, this bread never disappoints. Enjoy the ease of the recipe and make a double batch to share.

Ingredients
- 1 cup granulated sugar
- 2 - bananas, ripened
- 3/4 cup unsalted butter
- 2 - eggs
- 2 cups white flour
- 1 teaspoon baking soda
- 1 teaspoon vanilla
- 3/4 cup chopped pecans (or walnuts)

Step 1Preheat oven to 350 degrees. Prepare a loaf pan by spraying with non stick cooking spray

Step 2In a small bowl, mash bananas with the back of a fork until smooth.

Step 3Cream sugar and butter together until well blended. Add remaining ingredients, mixing well. Pour bread mixture into loaf pan and bake for 60 minutes or until a toothpick inserted into the center comes out clean.
