quick & easy banana nut bread

This is a good quick bread that I have made since 1967 when I was a newly wed. I had never had homemade quick breads before that time and an Army Wife introduced me to them and the rest is history. I always wait until my bananas are heavily speckled so they are soft and sweet. Great for breakfast or as a dessert, this bread never disappoints. Enjoy the ease of the recipe and make a double batch to share.

Ingredients

  • 1 cup granulated sugar
  • 2 - bananas, ripened
  • 3/4 cup unsalted butter
  • 2 - eggs
  • 2 cups white flour
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla
  • 3/4 cup chopped pecans (or walnuts)

How To Make quick & easy banana nut bread

  • Step 1
    Preheat oven to 350 degrees. Prepare a loaf pan by spraying with non stick cooking spray
  • Step 2
    In a small bowl, mash bananas with the back of a fork until smooth.
  • Step 3
    Cream sugar and butter together until well blended. Add remaining ingredients, mixing well. Pour bread mixture into loaf pan and bake for 60 minutes or until a toothpick inserted into the center comes out clean.
