pumpkin-banana bread w/pumpkin almond glaze

Fall being so near, Me and my neighbor have been enjoying pumpkin coffee after our dinner. So decided to make this pumpkin banana bread. Was this delicious! Normally I would of added pecans, but all I had were almonds. So I came up with the almond glaze to drizzle over.

Ingredients

  • 2 cups sugar
  • 2/3 cup oil
  • 4 - eggs
  • 3 1/3 cups all purpose flour
  • 2 teaspoons baking powder
  • 1 1/2 teaspoons salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ginger
  • 2/3 cup water
  • 1 - pumpkin (15oz can)
  • 1/2 cup mashed banana
  • 3/4 cup almonds, chopped

How To Make pumpkin-banana bread w/pumpkin almond glaze

  • Step 1
    Preheat oven 350. Grease bottom only of 2 loaf pan. Set aside. In large bowl with electric mixter, beat sugar and oil on medium til well mixed. Add eggs one at a time, beating well after each. Set aside.
  • Step 2
    In large bowl combine, Flour, baking soda, salt, cinnamin, ginger. Alternating add flour mix and water to sugar mix, beating on low speed til all combined. Beat in pumpkin and banana. Stir in almonds Pour mix into prepared loaf pans. Bake 50-60min. checking in center with toothpicks.
  • Step 3
    Let cool for 10min in baking dish. Pop out of dishes. Ready for glaze. GLAZE 1 1/2 cups Powder sugar 1/2 teaspoon pumpkin pie spice 1/8 teaspoon almond extract 1-2 tablespoons milk Mix for desired consistency. Drizzle glaze over breads.
