pear butter nut bread

Last fall, I made several half-pints of Pear Butter. It's similar to apple butter, but with the emphasis on nutmeg instead of cinnamon in the spices. I came up with this recipe, based on a pumpkin bread recipe, to use my pear butter. I've made a test batch, and it is delicious! I'll be serving it at a baby shower tomorrow, so I'll get some nice pictures posted soon.

Ingredients

  • 3/4 cup all purpose flour
  • 1/2 cup low carb baking mix
  • 1/4 cup almond meal/flour
  • 1/4 cup ground flaxseed
  • 1/4 teaspoon baking powder
  • 1 teaspoon baking soda
  • 3/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 1/3 cups sugar
  • 1/3 cup soft shortening (i used coconut oil)
  • 2 large eggs
  • 1 cup pear butter
  • 1/3 cup pear nectar (or milk)
  • 1/2 teaspoon vanilla
  • 1/2 cup coarsely chopped walnuts or pecans
  • 1/3 cup raisins or chopped dates (optional)

How To Make pear butter nut bread

  • Step 1
    Preheat oven to 350°F.
  • Step 2
    Stir together the dry ingredients (except sugar) in a medium bowl.
  • Step 3
    In a large bowl, beat the sugar, shortening, and eggs until light and fluffy. Add the pear butter and beat in.
  • Step 4
    Add the dry ingredients in 3 additions to the liquid ingredients, alternately with the pear nectar (or milk). Stir in the vanilla.
  • Step 5
    Fold in the nuts and raisins or dates (if used).
  • Step 6
    Place batter into 3 greased mini-loaf pans and bake about 25-30 minutes or until bread tests done with toothpick.
  • Step 7
    This can also be made in one large 9 x 5 loaf pan. It will take about 35-40 minutes to bake.
