Ingredients
- - 1 cup flour, white
- - 1 tsp cinnamon
- - 1 tsp baking soda
- - 1/2 tsp salt
- - 1/2 - 3/4 cup brown sugar (or vanilla)
- - 1 large egg
- - 1/4 + 1/8 cup coconut oil (or vegetable)
- - 1 1/4 cup papaya, peel, seeded and chopped
- - 1 tsp lemon juice
- - 1/8 cup coarsely chopped macadamia nuts
- - 1/8 cup shredded coconut
How To Make papaya bread

Step 1Preheat oven to 350 degrees . In a large bowl, combine the flour, cinnamon, soda, salt and sugar. Mix well.

Step 2In a small bowl, add the eggs, and oil and mix well, then slowly add to the flour mixture.

Step 3Next add the papaya, lemon and macadamia nuts, mixing lightly. Pour the bread batter into a greased 8 x 4 loaf pan and top with the shredded coconut.

Step 4Bake at 350 degrees F for 50 - 60 minutes or until toothpick comes out clean. Let cool in the pan on a wire rack for 10 - 15 minutes before removing from pan.
