mmm.. best zucchini bread!
Moist, sweet, a bit spicy.. this zucchini bread is just sooo good. I had a little extra batter left in the end and made muffins with them! I played with the ingredients a bit, and was really please with the results. As was the family. They gobbled it up & asked for seconds :)

- 2 teaspoons cinnamon
- 1 teaspoon ginger

How To Make mmm.. best zucchini bread!
-
Step 1Preheat oven to 325 degrees. Grease and flour a 9 X 5 loaf pan.
-
Step 2Measure the flour, salt, baking soda, baking powder, and spices into a bowl. In a mixing bowl, beat eggs with butter, applesauce, sugars, and vanilla extract until well blended. Slowly beat in the flour mixture until blended. Fold in zucchini.
-
Step 3Spread batter in the prepared loaf pan and bake for 60 to 70 minutes, until a toothpick inserted into the center comes out clean. Cool before slicing. NOTE: As mentioned above, I had enough batter leftover to make several average sized muffins as well. I baked those at the same temp (325) for 20 minutes. Enjoy!
