Moist, sweet, a bit spicy.. this zucchini bread is just sooo good. I had a little extra batter left in the end and made muffins with them! I played with the ingredients a bit, and was really please with the results. As was the family. They gobbled it up & asked for seconds :)
Preheat oven to 325 degrees. Grease and flour a 9 X 5 loaf pan.

Measure the flour, salt, baking soda, baking powder, and spices into a bowl. In a mixing bowl, beat eggs with butter, applesauce, sugars, and vanilla extract until well blended. Slowly beat in the flour mixture until blended. Fold in zucchini.

Spread batter in the prepared loaf pan and bake for 60 to 70 minutes, until a toothpick inserted into the center comes out clean. Cool before slicing.
NOTE: As mentioned above, I had enough batter leftover to make several average sized muffins as well. I baked those at the same temp (325) for 20 minutes. Enjoy!
