Nov. 11,2011 ,This Recipe Is A Healthy If You Are On A low Fat Diet.Or A Diabetic.It Is Good Even If You Are Not On A Diet So Dig In And Enjoy. In Our Recipe I Used Nutmeg Instead Of Cinnamon As We Have One Who Can Have Cinnamon But Our Pumpkin Bread Is Still Very Good.

pumpkin, canned or cooked
1/2 c

vegetable oil
1/2 c
plain low-fat yogurt
3/4 c
all-purpose flour
3/4 c
whole wheat flour
1 tsp
baking powder
1 tsp
baking soda
1 tsp
ground cinnamon
1/4 tsp
1/2 c
raisins or chopped nuts

How to Make Low -Fat Pumpkin Bread


  • 1in a large mixing bowel,beat together pumpkin,sugar,oil, and yogurt
  • 2in a medium bowel, combine the flours,baking poder,soda, cinnamon and salt to pumpkin mixture.
    stirring just until moistened.
  • 3stir in the nuts or raisins. Here At Home I Put 1/2 And 1/2 nuts and raisins.
  • 4pour into a greased 9x5x3-inch loaf pan.
  • 5in a preheated 350* oven
  • 6bake for 45-50 minutes or until a wooden toothpick inserted near the center comes out clean. check for doneness after 40 minutes.
  • 7cool on wire rack for 10 minutes.
  • 8this recipe can also be baked in 2 mini-loaf pans.
