Nov. 11,2011 ,This Recipe Is A Healthy If You Are On A low Fat Diet.Or A Diabetic.It Is Good Even If You Are Not On A Diet So Dig In And Enjoy. In Our Recipe I Used Nutmeg Instead Of Cinnamon As We Have One Who Can Have Cinnamon But Our Pumpkin Bread Is Still Very Good. Doris

Ingredients

  • 1 cup pumpkin, canned or cooked
  • 1/2 cup sugar
  • 2 tablespoons vegetable oil
  • 1/2 cup plain low-fat yogurt
  • 3/4 cup all-purpose flour
  • 3/4 cup whole wheat flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup raisins or chopped nuts

How To Make low -fat pumpkin bread

  • Step 1
    in a large mixing bowel,beat together pumpkin,sugar,oil, and yogurt
  • Step 2
    in a medium bowel, combine the flours,baking poder,soda, cinnamon and salt to pumpkin mixture. stirring just until moistened.
  • Step 3
    stir in the nuts or raisins. Here At Home I Put 1/2 And 1/2 nuts and raisins.
  • Step 4
    pour into a greased 9x5x3-inch loaf pan.
  • Step 5
    in a preheated 350* oven
  • Step 6
    bake for 45-50 minutes or until a wooden toothpick inserted near the center comes out clean. check for doneness after 40 minutes.
  • Step 7
    cool on wire rack for 10 minutes.
  • Step 8
    this recipe can also be baked in 2 mini-loaf pans.
  • Step 9
