kelli's homemade banana bread
This bread is really delicious and perfect for Christmas morning. I make this all year long also. Serve this warm with butter and a cup of your favorite coffee or tea, your comfy PJ's and a cozy place to sit and enjoy.

- 2 - ripe bananas
- 1/3 cup melted unsalted butter
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon pure vanilla extract or
- 1 1/2 teaspoons imitation vanilla extract
- 1 teaspoon baking soda
- 1 pinch salt
- 1 1/2 cups all purpose flour
- 2 - light handed dashes of cinnamon (optional)
- 1 - light handed dash of nutmeg (optional)
- 1 tablespoon unsalted butter, melted
- 1/4 cup chopped unsalted walnuts

Step 1IN A MEDIUM BOWL, ADD THE BANANAS AND BREAK THEM UP WITH A FORK OR PARING KNIFE. ADD THE MELTED BUTTER, SUGAR AND THE EGG THEN WITH CAKE BEATER (electric hand mixer), BEAT AT MEDIUM SPEED UNTIL SMOOTH AND CREAMY.

Step 2ADD THE VANILLA, FLOUR, BAKING SODA, SALT, CINNAMON AND NUTMEG. MIX WITH A SPOON UNTIL ALL THE DRY INGREDIENTS ARE JUST BLENDED THEN WITH THE CAKE BEATER, BEAT AT HIGH SPEED UNTIL SMOOTH AND ALL INGREDIENTS ARE WELL BLENDED.

Step 3WITH ABOUT HALF OF THE TABLESPOON OF MELTED UNSALTED BUTTER, BUTTER THE BOTTOM AND SIDES OF A 5X9" (glass preferred) LOAF PAN. POUR IN THE BATTER. POUR THE REST OF THE MELTED BUTTER IN THE CENTER OF THE BATTER AND BAKE AT 325 FOR 20 - 25 MINUTES (may need more or less bake time depending on your oven). WHEN KNIFE INSERTED IN THE DEEPEST PART OF THE BREAD COMES OUT CLEAN, YOUR BREAD IS DONE. LET SIT FOR 15 MINUTES OR SO AND SERVE OR SERVE HOT RIGHT OUT OF THE OVEN.
