huckleberry lime bread "lively" n. idaho version

i used Patti Jones Lemon Blueberry recipe and converted to huckleberry lime bread for our Son's wedding this past July. The Grands and i made 19 mini loaves for the gift bags for the out of towners. It got rave reviews! Thank you Patti Jones =)

Ingredients

  • 2 cups flour, sifted
  • 2 teaspoons baking powder
  • 2 teaspoons baking soada
  • 1 cup granulated sugar [3/4 c honey]
  • 1/4 teaspoon salt
  • 1 teaspoon lime zest
  • 1 cup fresh huckleberries [1/2 c frozen & drained]
  • 1/4 cup lime juice
  • 3 tablespoons melted butter
  • 2 - large eggs
  • 3/4 cup milk
  • GLAZE
  • 2 tablespoons lime juice
  • 1 teaspoon lime zest
  • 1/4 cup granulated sugar [1/8 c honey]

How To Make huckleberry lime bread "lively" n. idaho version

  • Step 1
    Combine dry ingredients, cut together w/a pastry cutter.
  • Step 2
    In another bowl combine wet ingredients. If you are substituting honey for sugar you would add it to the wet ingredients.
  • Step 3
    Make a well in the dry ingredients pour in wet ingredients, mix w/an electric mixer 1-2 minutes.
  • Step 4
    Gently fold in huckleberries and zest. Pour into a parchment lined greased 9x5 loaf pan. Bake at 350 for 50 minutes or until toothpick tests clean. Whilst bread is baking make your glaze.
  • Step 5
    Remove from oven cool 10 minutes, put wax paper over the top, turn out on a cutting board, leave parchment paper on, now turn out on wire rack. Pour or brush the glaze over the top of the loaf. The parchment paper keeps the glaze from making a mess and frosts the sides. Messy eating, but O, boy is it delish!

    Using the disposable mini loaves you can get 4-5 loaves per recipe. i over filled our first round =( it took 35 minutes to cook them at 350
  • Step 7
    Cooks note: substituting honey for sugar, changes the texture of the bread and it's much darker than if you use granulated sugar. It tastes delicious and is probably healthier for you =)
