Holiday Lemon Nut Bread

2 1/2 call purpose flour

1 cgranulated sugar

3 1/2 tspbaking powder

1/2 tspsalt

1/2 tspgrated lemon peel

1/2 cwater
-
1/3 cshortening, melted

2 largeeggs, lighten beaten

1/2 cfresh lemon juice

1 cchopped walnuts (or 1/2 c of nuts and 1/2 c of raisins
How to Make Holiday Lemon Nut Bread
- preheat oven to 350 degrees f. grease and flour a 9"x5" x3" loaf pan.
in large bowl. sift together flour, sugar, baking powder, baking soda, lemon peel and salt
combine water, shortening, eggs, and juice. make a well in the center of the dry ingredients. pour the egg mixture into the well, tossing with a fork until dry ingredients are just moistened. stir in nuts and raisins.
Spread batter into prepared pan
Bake bread until a toothpick inserted into the center comes out clean. approx. 60 - 75 mins.
let cool for 10 mins: remove from pan. cool on wire rack for 5 mins. wrap in plastic and refrigerate until ready to serve
