When my mother was in college, she waited tables at a local restaurant that served a "secret recipe" honey roll that everyone loved. My mom and my aunt who both worked there would watch through a window while the rolls were made, trying to guess the ingredients. Finally, after searching through some cookbooks from the early 1900's they found the recipe. It has been a family favorite ever since. Many years later, my children are serving these rolls to friends and family that they want to impress. To save time, we started using frozen bread dough, but any good yeast roll recipe will work.

Sweet and light, these breakfast rolls are a terrific choice for breakfast any day of the week! These delicious rolls are warm and gooey. The honey butter batter soaks into the rolls while they bake, adding fantastic flavor and texture. It's really the secret to this simple recipe. They're a great option if you want something like a cinnamon roll, but don't want to do all the work. No one will guess these start with a store-bought frozen dough. While they'd be great for a special occasion breakfast or brunch, you could even add them to a dessert bar. For testing, we cut the recipe in half and immediately regretted it. They were wiped out in no time.

Ingredients

  • 2 loaves frozen bread dough or make your own favorite yeast roll recipe
  • 6 large egg whites
  • 1 1/2 cups butter, softened
  • 4 cups powdered sugar
  • 1 cup honey

Test Kitchen Tips
We used frozen rolls instead of frozen bread dough, and they were the perfect size. To defrost them, we put them in a covered dish overnight in the fridge. Tuck the tail beneath the roll when it bakes, and the roll will stay tight and not unroll. Ours were perfectly baked in 40 minutes.
  • Thaw dough overnight.
    Step 1
    If using frozen bread dough, thaw the dough in a covered dish in the fridge overnight.
  • Roll dough into a log.
    Step 2
    Lightly butter (2) 9x13 baking dishes. With lightly floured hands, roll dough into a rope shape.
  • Roll log into a coil.
    Step 3
    Then coil the rope-shaped dough into a snail-shaped roll and place it in the prepared baking pan.
  • Place in a baking pan and repeat until all dough is rolled.
    Step 4
    Repeat with each piece of dough, placing 12 rolls into each pan.
  • Cover with plastic wrap and let rise.
    Step 5
    Cover with plastic wrap that has been sprayed with nonstick pan coating spray. Let rise in a warm place until rolls have doubled in size.
  • Add powdered sugar to whipped egg whites and mix.
    Step 6
    While the rolls are rising, prepare the honey batter. In a glass or stainless steel bowl that is completely clean and residue-free, beat egg whites until stiff peaks form. Gradually add powdered sugar until all is incorporated.
  • Blend in softened butter.
    Step 7
    Blend in the softened butter until well combined.
  • Add honey and blend well.

  • Add a big dollop of the honey mixture on top of the risen rolls.
    Step 9
    Preheat the oven to 325 degrees F, and space the racks evenly. When the rolls have fully risen, place a very generous dollop of batter on every roll, making sure that each one is covered well.
  • Bake 40 minutes.
    Step 10
    Place the pans in the preheated oven and bake for 40 - 50 minutes.
  • Bake until golden brown.
    Step 11
    Bake until the rolls are golden brown. Best served warm. When serving, use a good spatula that will go all the way under the roll and the gooey honey goodness that is underneath.
