I don't like bananas but I do like banana bread and this is a really great one if you are diabetic or can't use sugar.

1 1/2 can(s)
all purpose flour
1 c
whole wheat flour
2 tsp
baking powder
1 tsp
baking soda
1 tsp
ground cinnamon
1/4 tsp
fresh ripe bananas, mashed
1 c
sugar substitute
1/2 c
applesauce, unsweetened
3 large
egg whites
1 1/8 tsp
vanilla extract
1/2 c
nuts, pecans or walnuts


1Preheat oven to 350 degrees F
2Spray a pan with nonstick cooking spray
3I medium bowl, whisk together flours, baking powder, baking soda, cinnamon and salt to combine.
4I another bowl, beat the mashed bananas, sugar substitute, applesauce, egg whites and vanilla until mixed well. Add the dry ingrediets and whisk until smooth.
5Add nuts slowly,stiring them in.
6Transfer the batter to the loaf pan and smooth the top.
7Bake for 50 minutes to an hour or until the top is browned and the sides of the bread pulls away from the sides of the pan. Remove from the oven and let stand for 10 minutes on baking rack. Invert and unmold onto the rack, turn right side up and let cool.
