My grandmother, from Newfoundland, made this delicious banana bread for us when we were growing up; I haven't changed a single thing and it reminds me of her whenever I smell it baking in the oven, especially on a cold, snowy winter day!

Ingredients

eggs
3/4 c
sugar
1/4 c
butter (softened)
1/2 c
bananas (mashed)
2 c
all purpose flour
1/4 tsp
baking powder
3/4 c
walnut pieces

How to Make Grandmother O'Brien's Banana Bread

Step-by-Step

  • 1Preheat oven to 350 degrees
  • 2Lightly grease loaf pan (or use 18 muffin liners)
  • 3In large bowl, mix together the eggs, sugar and butter. When thoroughly mixed, add mashed bananas.
  • 4In small bowl, combine the flour, baking powder and baking soda. Slowly fold into the banana mix. If desired, add ¾ cup of walnut pieces. Pour mixture into lightly greased loaf pan. Bake for 1 hour.
