gram's zucchini bread
I remember my mother making this sweet quick bread when I was growing up in Pennsylvania Dutch country. It's a great way to use some of the extra zucchini from the garden. It freezes well and can be frozen to give as gifts for thanksgiving or Christmas which is what we did for many years...... what a great gift! A taste of the Summer for the winter holidays!

Ingredients
- 2 cups sugar
- 1 cup vegetable oil
- 3 large eggs
- 2 teaspoons vanilla extract
- 2 cups grated zucchini (unpeeled)
- 3 cups all purpose flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 3 teaspoons cinnamon
How To Make gram's zucchini bread

Step 1Heat oven to 350 degrees F. Grease and flour 2 loaf pans or tube pan. Set aside.

Step 2In a large bowl, combine the sugar, oil, eggs, vanilla and zucchini. In a separate bowl, combine the flour, salt, baking soda, baking powder and cinnamon. Add dry ingredients to wet and mix well.

Step 3Pour batter into prepared loaf pans and bake for 50-60 minutes or until toothpick inserted near middle comes out clean (but it may look a little wet....).

Step 4Cool in pan for 10 minutes then transfer to a wire rack to cool completely.
