gluten free banana bread
4 years ago my husband was diagnosed with Celiac. i was freaking out. not sure how i would ever cook gluten free. i checked with our local extension office. this recipe was in a allergy booklet they had. it is great we have it often. turns out so good hard to believe it is gluten free. my husband like it with ice cream.

Ingredients
- 1/2 cup oil
- 3/4 cup sugar
- 1 cup mashed bananas
- 3 - eggs well beaten
- 1 3/4 cups rice flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
How To Make gluten free banana bread

Step 1Grease the bottom of a loaf pan. Bake at 375* 40 min.

Step 2Cream the oil & sugar. Stir in the mashed bananas, Add eggs & blend thoroughly.

Step 3Mix in the Rice flour, soda & salt. Blend well.

Step 4Spread batter into the loaf pan evenly. bake 40 minutes. checking center with a tooth pick, if poked & clean, its done Remove from pan & cool on a rack.
