I served this as a dessert, sliced and with a dollop of whipped cream. You can buy candied ginger bits in larger stores and specialty markets, which saves time of chopping.

Ingredients

  • 1 2/3 c
    all purpose flour
  • 3/4 c
    granulated sugar
  • 1 1/2 tsp
    baking powder
  • 1/2 tsp
    salt
  • 1 tsp
    ground ginger
  • 1/2 c
    butter, melted
  • 1/4 c
    milk
  • 2 large
    eggs
  • 1 can(s)
    (15 oz) sliced pears, drained and chopped
  • 1/4 c
    candied ginger. chopped
  • 1/2 c
    pecan halves

How to Make Ginger, Pear and Pecan Bread

Step-by-Step

  1. Preheat oven to 350F. Butter the bottom and sides of a loaf pan.
  2. In a large bowl, sift flour, sugar, baking powder, salt and ginger.
  3. In a medium bow, beat melted butter, mil and eggs; add to dry ingredients and stir in pears until well combined.
  4. Stir in candied ginger and pecans. Pour batter in prepared pan.
  5. Bake 50-55 minutes, or until a toothpick inserted in center comes out clean.
  6. Cool on wire rack in pan for 10 minutes before removing from pan.
