ginger, pear and pecan bread

I served this as a dessert, sliced and with a dollop of whipped cream. You can buy candied ginger bits in larger stores and specialty markets, which saves time of chopping.

Ingredients

  • 1 2/3 cups all purpose flour
  • 3/4 cup granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground ginger
  • 1/2 cup butter, melted
  • 1/4 cup milk
  • 2 large eggs
  • 1 can (15 oz) sliced pears, drained and chopped
  • 1/4 cup candied ginger. chopped
  • 1/2 cup pecan halves

How To Make ginger, pear and pecan bread

  • Step 1
    Preheat oven to 350F. Butter the bottom and sides of a loaf pan.
  • Step 2
    In a large bowl, sift flour, sugar, baking powder, salt and ginger.
  • Step 3
    In a medium bow, beat melted butter, mil and eggs; add to dry ingredients and stir in pears until well combined.
  • Step 4
    Stir in candied ginger and pecans. Pour batter in prepared pan.
  • Step 5
    Bake 50-55 minutes, or until a toothpick inserted in center comes out clean.
  • Step 6
    Cool on wire rack in pan for 10 minutes before removing from pan.
