extremely moist fat-free banana bread

I have never had banana bread this moist before! I tweaked a recipe I found in my church cookbook to make it fat-free, extra flavorful, and extremely moist. I've also made this one into muffins so it is already separated into portions. I hope you enjoy it as much as my son and I do!

Makes 1 loaf or 18 muffins
Ingredients
- 1 cup granulated sugar
- 1/2 cup egg substitute (equivilent of 2 eggs)
- 3 large ripe bananas
- 2 tablespoons skim milk
- 1 teaspoon baking soda-disolved in the hot water
- 1/2 cup hot water
- 1 2/3 cups all purpose flour
- 1 teaspoon salt
How To Make extremely moist fat-free banana bread

Step 1Preheat oven to 350 degrees F Spray a loaf pan with pan spray.

Step 2Place all ingredients in a mixing bowl, making sure to smash bananas very well.

Step 3Pour into the prepared loaf pan and place in the preheated oven. Bake for 1 hour (may need a little more time) or until a toothpick comes out clean. Let cool about 15 minutes in the pan then remove from pan and cool completely on a cooling rack.
