    whole eggs
  • 1 c
    prepared eggnog
  • 2 tsp
    rum extract
  • 1 c
    white sugar
  • 1 c
    real butter
  • 2 1/4 c
    all purpose flour
  • 2 tsp
    baking powder
  • 1/2 tsp
    salt
  • 1/2 tsp
    freshly grated nutmeg
  • 1 1/4 tsp
    pure vanilla extract

How to Make EGGNOG QUICK BREAD

Step-by-Step

  1. Preheat oven to 350 degrees.
  2. Grease the bottom of a regular 9"x5" loaf pan, or three of the smaller 3"x5" loaf pans.
  3. Sift together the flour, baking powder, salt and nutmeg.
  4. Beat eggs.
  5. Blend together the beaten eggs, eggnog, rum extract, sugar, vanilla and butter.
  6. Bake until tester inserted into the center comes out clean. For regular loaf pans this should take about 40-60 minutes. For the smaller loaf pans, this should take about 35-40 minutes.
  7. Cool for 10 minutes before removing from pan.
    Cool completely, wrap tightly and store refrigerated.
