Ingredients

  • 2 - whole eggs
  • 1 cup prepared eggnog
  • 2 teaspoons rum extract
  • 1 cup white sugar
  • 1 cup real butter
  • 2 1/4 cups all purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly grated nutmeg
  • 1 1/4 teaspoons pure vanilla extract

How To Make eggnog quick bread

  • Step 1
    Preheat oven to 350 degrees.
  • Step 2
    Grease the bottom of a regular 9"x5" loaf pan, or three of the smaller 3"x5" loaf pans.
  • Step 3
    Sift together the flour, baking powder, salt and nutmeg.
  • Step 4
    Beat eggs.
  • Step 5
    Blend together the beaten eggs, eggnog, rum extract, sugar, vanilla and butter.
  • Step 6
    Bake until tester inserted into the center comes out clean. For regular loaf pans this should take about 40-60 minutes. For the smaller loaf pans, this should take about 35-40 minutes.
  • Step 7
    Cool for 10 minutes before removing from pan. Cool completely, wrap tightly and store refrigerated.
