easy pumpkin bread

An older cousin of mine shared this recipe years ago. It has become a traditional recipe pulled out every fall!!

Ingredients

  • 3 cups all purpose flour
  • 4 large eggs
  • 1 teaspoon baking soda
  • 2 teaspoons cinnamon
  • 1/2 cup nuts, chopped (i use pecans od black walnuts.)
  • 2 cups pumpkin, canned or cooked
  • 1 1/2 cups granulated sugar
  • 1 1/2 cups vegetable oil

How To Make easy pumpkin bread

  • Step 1
    Preheat oven to 350 degrees. Prepare 2 loaf pans with non stick spray.
  • Step 2
    Cream sugar, oil, and eggs. Add dry ingredients and pumpkin. Add chopped nuts. Mix well.
  • Step 3
    Divide evenly between prepared loaf pans. Bake 1 hour at 350 degrees. When done baking turn out of loaf pans after 5 minutes and cool completely. May be wrapped in plastic wrap and frozen up to two weeks.
