I love to cook this at night and wake up to the smell of fresh baked bread. Set your machine to manufacturer's quick bread setting. Some machines over bake this recipe so keep a close eye on it and you may have to remove before the cycle ends.

Ingredients

2 large eggs
1/3 cup butter or applesauce
1 ounce skim milk
2 medium bananas, mashed
1 1/3 cups bread flour
2/3 cup sugar substitute
1 1/4 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup chopped nuts

How To Make easy banana bread in bread machine

Step 1

Put eggs, butter or applesauce, milk and bananas in the bread pan.

Step 2

In a mixing bowl, mix the flour, sugar, baking powder, baking soda, salt and nuts and then add to the pan.
Step 3

Set the bread machine to manufacturer's quick bread setting.
Step 4

Use the spatula to scrape down the sides of the pan after mixing five minutes to eliminate flour pockets.
