cranberry orange bread

I have had this recipe for a couple of years ,it came with a set of mini loaf pans ,my best friend sent me .I often bake it in 8 or 9 inch loaf pans just remember to adjust the timing ..I do not grease my pans I use a spray I order from King Arthur Flour ,it leaves no residue on pans and does not leave a greasy taste .

Ingredients

  • 2/3 cup butter (softened)
  • 1 1/2 cups sugar
  • 3 tablespoons orange juce
  • 2 tablespoons grated orange zest
  • 4 - large eggs
  • 3 cups all-purpose flour
  • 2 teaspoons baking power
  • 2 teaspoons salt
  • 1 cup milk
  • 2 cups dried cranberries

How To Make cranberry orange bread

  • Step 1
    In a mixing bowl ,cream the butter ,sugar ,orange juice and zest .Add the eggs one at a time ,beating well after each addition .
  • Step 2
    Combine the flour ,baking power and salt ;added to the creamed mixture alternately with milk .Stir in Cranberries
  • Step 3
    Pour in to 4 mini loaf pans .Bake at 350 degrees F for 30-35 minutes or until a toothpick inserted near the center come out clean. Cool for 10 minutes before removing from pans to wire rack.
