I love coconut anything, but the breads are my weakness. I hope you will enjoy this lovely treat. For best results, use canned coconut milk not cream of coconut milk.

Ingredients
- - 2 cups flour
- - 1 tbsp. baking powder
- - 1/4 tsp. salt
- - 1/2 cup cane sugar, brown, white
- - 1 jumbo egg, beaten
- - 1/4 cup coconut milk
- - 6 tbsp butter, melted
- - 1/2 tsp vanilla extract, pure
- - 1/2 cup coconut, flakes, grated
- - 6 tbsp cashews, coarsley chopped (optional)
How To Make coconut bread

Step 1Preheat oven at 350°F, grease loaf pan and set aside until needed.

Step 2Into a large bowl sift the flour, baking powder and salt, mix well. Next, add into the bowl, the sugar, egg, coconut milk, butter, vanilla, grated coconut and the cashews; mixing well.

Step 3Dump the mixture onto a lightly floured counter and knead gently to form a dough.

Step 4Shape the dough into a loaf form and put into the prepared pan and bake for 45 minutes.
