For best results, use canned coconut milk not cream of coconut milk.
·2 cups flour
·1 tbsp. baking powder
·1/4 tsp. salt
·1/2 cup cane sugar, brown, white
·1 jumbo egg, beaten
·1/4 cup coconut milk
·6 tbsp butter, melted
·1/2 tsp vanilla extract, pure
·1/2 cup coconut, flakes, grated
·6 tbsp cashews, coarsley chopped (optional)
How to Make Coconut Bread
- Preheat oven at 350°F, grease loaf pan and set aside until needed.
- Into a large bowl sift the flour, baking powder and salt, mix well.
Next, add into the bowl, the sugar, egg, coconut milk, butter, vanilla, grated coconut and the cashews; mixing well.
- Dump the mixture onto a lightly floured counter and knead gently to form a dough.
- Shape the dough into a loaf form and put into the prepared pan and bake for 45 minutes.
