  • 2
    eggs
  • 1 c
    sugar
  • 1/2 c
    melted butter
  • 1 c
    mashed ripe bananas
  • 1/2 tsp
    almond flavoring
  • 1/1/2 c
    flour
  • 1/2 c
    med. coconut
  • 1/2 tsp
    baking powder
  • 1/2 tsp
    baking soda
  • 1/2 tsp
    salt
  • 1/2 c
    walnuts
  • 1/2 c
    maraschino cherries

How to Make Coconut Banana Bread

Step-by-Step

  1. Break eggs into a mixing bowl and beat until light and frothy. Add sugar and melted butter. Beat well. Stir in mashed bananas and almond flavoring. Measure remaining ingredients into another bowl and stir until well mixed. Pour over batter and stir just to combine. place into greased loaf pan. Bake in 350 oven for 1 hour until toothpick inserted in the center comes out clean. Let stand for 10 min. Remove from pan and let cool.
