  • 2-1/2 c
    carrots, shredded
  • 1 c
    pecans, finely chopped
  • 2 c
    unbleached flour
  • 1 1/2 c
  • 2 tsp
    baking powder
  • 2 tsp
  • 1 tsp
  • 3
  • 1 1/2 c
    vegetable oil
  • 2 tsp

How to Make Cinnamon-Carrot Nut Bread


  1. 1.In a medium bowl, toss together the carrots and pecans and set aside. In another bowl, stir together flour, sugar, baking powder, cinnamon and salt. Set aside.
  2. 2. In a large mixing bowl, beat eggs with electric mixer. Beat in oil and vanilla. Gradually beat in flour mixture, than carrot mixture.
  3. 3. Turn into a well-greased 10" tube pan. Bake at 325 degrees for one hour and ten minutes or until toothpick inserted in center comes out clean. Cool completely. Makes 24 servings.
