A dark, easy-to-make bread that will stay moist for days... if it lasts that long!

Ingredients

  • 2-1/2 cup carrots, shredded
  • 1 cup pecans, finely chopped
  • 2 cups unbleached flour
  • 1 1/2 cups sugar
  • 2 teaspoons baking powder
  • 2 teaspoons cinnamon
  • 1 teaspoon salt
  • 3 - eggs
  • 1 1/2 cups vegetable oil
  • 2 teaspoons vanilla

How To Make cinnamon-carrot nut bread

  • Step 1
    1.In a medium bowl, toss together the carrots and pecans and set aside. In another bowl, stir together flour, sugar, baking powder, cinnamon and salt. Set aside.

    2. In a large mixing bowl, beat eggs with electric mixer. Beat in oil and vanilla. Gradually beat in flour mixture, than carrot mixture.

    3. Turn into a well-greased 10" tube pan. Bake at 325 degrees for one hour and ten minutes or until toothpick inserted in center comes out clean. Cool completely. Makes 24 servings.
