Makes 24 servings.
Ingredients
- 2-1/2 cup carrots, shredded
- 1 cup pecans, finely chopped
- 2 cups unbleached flour
- 1 1/2 cups sugar
- 2 teaspoons baking powder
- 2 teaspoons cinnamon
- 1 teaspoon salt
- 3 - eggs
- 1 1/2 cups vegetable oil
- 2 teaspoons vanilla

Step 11.In a medium bowl, toss together the carrots and pecans and set aside. In another bowl, stir together flour, sugar, baking powder, cinnamon and salt. Set aside.

Step 22. In a large mixing bowl, beat eggs with electric mixer. Beat in oil and vanilla. Gradually beat in flour mixture, than carrot mixture.

Step 33. Turn into a well-greased 10" tube pan. Bake at 325 degrees for one hour and ten minutes or until toothpick inserted in center comes out clean. Cool completely. Makes 24 servings.
