ciao bella cranberry orange bread

One of my favorites! Reminds me of the cranberry orange muffins you buy at the local coffee shops. But this one doesn't cost you an arm and a leg! LOL When cranberries are in season I buy a bunch and freeze them right in the bags. When I need them I just thaw and chop. I adjusted this recipe so you get a true orange flavor with the OJ and zest. And using oil instead of butter gives a moist consistency. Enjoy!

Ingredients
- 1/4 cup vegetable oil
- 1 cup sugar
- 1 large egg
- 1 teaspoon orange zest
- 2 cups flour
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1/2 teaspoon baking soda
- 3/4 cup orange juice, not from concentrate
- 1 cup cranberries, fresh, chopped
How To Make ciao bella cranberry orange bread

Step 1In a large mixing bowl combine oil and sugar until creamy. Beat in egg and orange zest.

Step 2Combine flour, baking powder, salt and baking soda in a seperate bowl and mix well.

Step 3Add flour mixture with sugar mixture and fold in chopped cranberries. Do not over mix the bread will become tough.

Step 4Pour into greased 9" X 5" loaf pan. Bake at 350 degrees for 60-65 minutes. Cool for 15 minutes remove from pan and cool bread completely on wire rack.
