One of my reasons for going to Mimi's Cafe is for the basket of bread they bring to your table while you are waiting for your meal to be served. One of the breads in the basket and my favorite is this delightful carrot bread. This is Mimi's Cafe recipe. Hope you enjoy this bread as much as I do.

Ingredients
- 1 1/2 cups flour
- 1 teaspoon baking soda
- 2 teaspoons baking powder
- 2 teaspoons cinnamon
- 1/2 teaspoon salt
- 1 cup vegetable oil
- 1 1/2 cups brown sugar
- 3 - eggs
- 1/2 cup chopped walnuts
- 1/2 cup crushed pineapple, drained
- 1/2 cup raisins
- 1 cup finely shredded carrot
How To Make carrot bread from mimi's cafe

Step 1Preheat oven to 350 degrees. Grease and flour 9-inch square pan or four 3 X 6-inch loaf pans.

Step 2In a medium bowl; sift together first five ingredients; set aside.

Step 3In a seperate bowl; whisk together oil, brown sugar and eggs; pour into flour mixture and stir well.

Step 4Stir in walnuts, pineapple, raisins and carrots.

Step 5Pour into prepare pan(s). Bake 30 to 40 minutes if using 9-inch pan or 20 minut for mini pan or until lighty browned. Test with toothpick or cake tester to make sure it's done.
