brownie zucchini bread

This is a mixture of a few recipes that I've made before. It really has the texture and taste of a brownie but it has a healthy vegetable. So why not indulge in a chocolaty treat while you eat healthy!

Ingredients

  • 2 1/4 cups all purpose flour
  • 2 teaspoons baking powder
  • 2 cups sugar
  • 3/4 cup cocoa, unsweetened
  • 1 teaspoon vanilla
  • 3 large eggs
  • 1 cup milk
  • 1 cup vegetable oil
  • 2 cups zucchini, shredded
  • 1/2-1 cup mini chocolate chips
  • pinch salt

How To Make brownie zucchini bread

  • Step 1
    Beat the eggs with the sugar in a bowl until fluffy. Add vanilla and oil to this mixture.
  • Step 2
    In a separate bowl,mix flour, baking powder, and cocoa.
  • Step 3
    Alternatively add, to the beaten egg mixture, the flour mixture and milk.
  • Step 4
    Divide the batter into two loaf pans. Sprinkle the mini chocolate chips on top of the batter. Bake in a 335 degree oven for 1 hour and ten minutes. Enjoy! It's so good!
