Ingredients

1 stick
butter
2/3 c
dark brown sugar, packed
1-1/3 c
yellow cornmeal
1 c
flour
4 tsp
baking powder
3/4 tsp
salt
1/4 c
sour cream/plain yogurt
3/4 c
milk
2 large
eggs, beaten lightly

Step-By-Step

1Preheat oven to 350.
Grease a loaf pan.
2Measure butter and sugar into a small saucepan and heat just until melted.
Turn off heat and stir to combine.
Allow to cool slightly.
3In a large bowl, whisk together the cornmeal, flour, baking powder, and salt. Set aside.
4Whisk milk and eggs into the sugar-butter mixture.
5Pour wet ingredients into the dry ingredients and stir gently just until blended.
Pour into prepared loaf pan.
6Bake 30 minutes, until a toothpick inserted in the center comes out dry.

Allow to cool in the pan for 10 minutes, then turn out onto a cooling rack to finish cooling.
