I have made this bread numerous times always delish!!!Yogurt adds a moist and tender texture to this quick bread and reduces the amount of oil needed in the recipe,you could also make this into muffins and sprinkle with course sugar. To mix it up a little for the fall season substitute cranberries for the blueberries and add about a teaspoon of fresh orange zest and top with a vanilla glaze!

Ingredients

  • 8 ounces vanilla yogurt
  • 3/4 cup sugar
  • 1/3 cup vegetable oil
  • 1/4 cup milk
  • 2 large eggs beaten
  • 2 cups all purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup fresh blueberries

How To Make blueberry yogurt bread

  • Step 1
    Preheat oven 350*F.Coat bottom of a 9x5 inch loak pan with cooking spray
  • Step 2
    Combine yogurt,sugar,oil and milk in a large bowl;stir to mix well.Stir in beaten eggs till well combined
  • Step 3
    Combine flour,baking powder,baking soda and salt in a medium bowl;mix well.Stir flour into yogurt mixture until well combined.Stir in blueberries
  • Step 4
    Pour batter into prepared pan.bake until knife comes out clean about 55 to 65 min.Cool in pan 10 min,remove bread to a wire rack to cool completely
