Avocado Walnut Bread
1/4 cbutter, room temperature
1 cgranulated sugar
4 largeeggs, unbeaten
2 largeripe avocados, mashed well (1 cup)
1/2 cgreek yogurt or dairy sour cream
1 Tbsplime juice
2 call purpose flour
1/2 tspbaking soda
1 tspbaking powder
3/4 cchopped walnuts
How to Make Avocado Walnut Bread
- Cream butter and gradually add sugar creaming well. Add eggs, mashed avocado, lime juice, and vanilla; set aside.
- Combine flour, soda ,baking powder and salt. alternately with the yogurt, beginning and ending with dry ingredients.
Blend well after each addition.
- Use low speed. Stir in nuts.
Pour batter evenly into a 9x5-inch loaf pan, well greased on the bottom and corners.
Bake in 350^ oven for 45-50 minutes, or test done with wooden toothpick, as all ovens bake differently.
Let set in pan for 5 miutes then remove onto wire rack and brush with butter or olive oil on all sides.
