Ingredients

  • 1/4 cup milk
  • 1/2 cup water
  • 1 cup chopped dried apricots
  • - grated peel or 1 orange
  • 3/4 cup packed dark brown sugar
  • 1 - egg, lightly beaten
  • 3 tablespoons oil
  • 3/4 cup chopped walnuts
  • 1 1/2 cups flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon salt

How To Make apricot walnut bread

  • Step 1
    Combine milk, water, dried apricots and orange peel in a 2 qt. glass bowl. Microwave, uncovered, at power level high for 2 1/2 to 4 minutes, or until mixture boils, stirring once.
  • Step 2
    Add brown sugar, egg, and oil to fruit mixture, beating to blend well. Stir in remaining ingredients, pour batter into well greased loaf dish. Do not cover. Place dish on an inverted saucer or cereal bowl in the oven to elevate.
  • Step 3
    Set microwave oven at power level low & defrost for 16 minutes, and then power level high for 4 minutes. If necessary, microwave at power level high an additional 4 to 9 min. to complete baking. Let loaf stand 10 min. before removing from dish. Let stand an additional 5 minutes before serving.
