I like peaches and decided to make this for a family gathering.

  • 3/4 c
    melted butter
  • 3 eggs
  • 3 c
    granulated sugar
  • 1 1/2 c
  • 2 Tbsp
    lemon juice, fresh
  • 1 c
    cocoa, unsweetened
  • 2 tsp
    vanilla extract
  • 2 2//3 c
    all purpose flour
  • 2 tsp
    baking soda
  • 1 1/2 c
    hot coffee
  • 1
    large can sliced peaches..drained
  • 2 c
    35% whipping cream
  • 1/2 c
    icing sugar
  • 1/4 CUP PE c
    peach juice
  • 1 1/2 c
    sour cream, lite

How to Make Peachy cake


  1. heat oven to 350 degrees...butter three nine inch cake pans.line bottom with parchment paper.....beat the butter, eggs, sugar, milk, lemon juice, cocoa and vanilla with electric mixer beat til well combined
  2. In separate bowl..sift flour and baking soda . add the flour mix in three additions,alternating with coffee and beat until smooth..divide the mix to pans and bake 25 to 30 minutes til toothpick comes out clean. cool in the pans.
  3. Filling....blot peaches on paper towel..reserve 3 or 4 for garnish..coarsley chop peaches..whip the cream with the powdered {icing} sugar and 1 Tbsp peach juice beat until very thick,,fold in sour cream and peaches.
  4. Remove cake from pans and you can ice the cake with the 3 layers or slice each of the 3 layers to end up with 6 layers and smooth each layer with the filling and finish with covering the top of cake with remaining filling and arrange the left over peaches on center of top...serves 12....
