welsh bread (for automatic bread machines)

This is a traditional Welsh Bread recipe. The original recipe has been modified for automatic bread machines, and instructions follow the order for adding ingredients that's most common for bread machines (liquid ingredients first, dry ingredients second, and yeast last, which yeast shouldn't touch any of the liquids until the machine starts or it can cause the yeast to active too soon). If your bread machine has other recommendations for adding ingredients, follow the manufacturer's instructions.

  • SMALL LOAF:
  • 1 tsp
    distilled white vinegar
  • 2/3 cup
    milk
  • 2 Tbsp
    brown sugar
  • 1
    egg
  • 4 Tbsp
    unsalted butter
  • 1/2 tsp
    salt
  • 2 Tbsp
    molasses
  • 2 cups
    bread flour
  • 1 pinch
    baking soda
  • 1 tsp
    caraway seed
  • 1 1/2 tsp
    active dry yeast
  • 3/4 cup
    raisins or dried currants
  • LARGE LOAF:
  • 1 1/2 tsp
    distilled white vinegar
  • 1 cup
    milk
  • 3 Tbsp
    brown sugar
  • 1 lg
    egg
  • 6 Tbsp
    unsalted butter
  • 3/4 tsp
    salt
  • 3 Tbsp
    molasses
  • 3 cups
    bread flour
  • 1/8 tsp
    baking soda
  • 1 1/2 tsp
    caraway seed
  • 2 1/4 tsp
    active dry yeast
  • 1 cup
    raisins or dried currants

How To Make welsh bread (for automatic bread machines)

    Combine the vinegar and milk, and let stand for at least 15 minutes and thickens.

    Add the vinegar mixture, brown sugar, egg, butter, salt and molasses to bread machine. Tope with bread flour and spread to cover all the liquid. Add baking soda and caraway seeds. With the end of a wooden spoon, make a small well in the dry ingredients (being careful not to reach the liquids), and pour yeast into the well.

    Set the bread machine to basic cycle (fruit bread, white bread, etc, depending on your machine). Select medium crust setting. Start the bread machine.

    At the beaper (or after the first kneading in Panasonic, Sanyo and National machines, or after 40 minutes from "start" for Toastmaster), add the raisins. Close lid and allow the bread machine to continue.

    Alternately, this bread can be mixed and kneaded in the machine, and the dough placed in a loaf pan to bake in the oven. To do so, set the bread machine to Dough setting. Remove dough after mixing and kneading, and shape into a loaf, cover and let rise in a warm place until doubled in size, about 1 hour. Bake the bread in a preheated oven at 375°F (190°C) for 30 to 45 minutes. The bread will be golden brown and will sound hollow when thumped on the bottom.
