spicy cornbread or cornbread muffins

This is my version of Mexican cornbread. It's got a bit of a kick to it. It will be as mild or hot as your pico de gallo is.

Ingredients

  • 1 cup yellow corn meal
  • 1 cup flour, all purpose
  • 1/4 cup sugar
  • 4 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon granulated garlic
  • 1 teaspoon granulated onion
  • 1 - egg
  • 1 1/2 cups buttermilk (or sour milk)
  • 1/4 cup butter, melted
  • 1 cup pico de gallo or 1 can rotel, drained
  • 1 cup grated cheese, your choice

  • Step 1

  • Step 2
    Mix together dry ingredients. Add milk and egg. Mix together until lumps are gone. Add pico de gallo and cheese, mix well.
  • Step 3
    Place butter in cast iron skillet and heat till melted in oven. Remove and pour cornbread into pan. Bake 425° for 25 min.
  • Step 4
    For air fryer oven: 360º 30 min
