spicy cornbread or cornbread muffins
This is my version of Mexican cornbread. It's got a bit of a kick to it. It will be as mild or hot as your pico de gallo is.

Ingredients
- 1 cup yellow corn meal
- 1 cup flour, all purpose
- 1/4 cup sugar
- 4 teaspoons baking powder
- 1/2 teaspoon salt
- 1 teaspoon granulated garlic
- 1 teaspoon granulated onion
- 1 - egg
- 1 1/2 cups buttermilk (or sour milk)
- 1/4 cup butter, melted
- 1 cup pico de gallo or 1 can rotel, drained
- 1 cup grated cheese, your choice

Step 2Mix together dry ingredients. Add milk and egg. Mix together until lumps are gone. Add pico de gallo and cheese, mix well.

Step 3Place butter in cast iron skillet and heat till melted in oven. Remove and pour cornbread into pan. Bake 425° for 25 min.

Step 4For air fryer oven: 360º 30 min
