Savoury Scones

Melanie B

I took a trip to Ireland November 2011. I picked up this cookbook called A taste of Killarney, compiled by Jane Bergin. This recipe is from Killeen House Hotel, Chef Paul O'Gorman.

How to Make Savoury Scones

  1. Mix flour and the baking powder in a large bowl. Rub in butter until size of peas.
  2. Add the spring onions, diced peppers, cheeses, salami (optional) and Cajun spice. Mix.
  3. Add milk and gently mix to form a dough. Do not knead. On a floured surface, press dough mixture flat into a uniform level of about 1 1/2 inches thick. Cut into triangles and brush with egg wash.
  4. Bake at 350 for about 15 minutes or until golden brown.
