I took a trip to Ireland November 2011. I picked up this cookbook called A taste of Killarney, compiled by Jane Bergin. This recipe is from Killeen House Hotel, Chef Paul O'Gorman.

Ingredients
- 2 1/4 pounds plain flour ( 9 cups)
- 9 ounces butter, unsalted
- 1 teaspoon baking powder
- 2 cups milk
- 1 - diced red, green & yellow pepper each
- 1 bunch green onions
- 1 cup cheddar cheese, shredded
- 1 cup hard salami, sliced (omit for vegeterian)
- 1/2 cup parmigiano-reggiano, grated
- 2 teaspoons cajun seasoning
How To Make savoury scones

Step 1Mix flour and the baking powder in a large bowl. Rub in butter until size of peas.

Step 2Add the spring onions, diced peppers, cheeses, salami (optional) and Cajun spice. Mix.

Step 3Add milk and gently mix to form a dough. Do not knead. On a floured surface, press dough mixture flat into a uniform level of about 1 1/2 inches thick. Cut into triangles and brush with egg wash.

Step 4Bake at 350 for about 15 minutes or until golden brown.
