This is just a poor man's appetizer. Great for that treat- needed next day , because it has to set over night. Baked golden brown and puffed to perfection.Recipe is from Sister Bede.

Ingredients For poorman's puff appetizers

  • 1
    homemade loaf of bread, any flavor,unsliced
  • 1 stick
    oleo or butter
  • 1 tsp
    chopped fine chives
  • 1 dash
    garlic salt
  • 3 oz
    pkg. cream cheese, very soft (spreadable)
  • 1/2 c
    or more shredded cheddar cheese or other cheese
  • 2 lg
    egg whites, beaten stiff
  • 1 or 2 tsp
    diced cooked bacon

How To Make poorman's puff appetizers

  • 1
    Slice bread 1 1/2 to 2 -inches thick. Cut off crust and cut into fingers, 3 to a slice. Cream butter,spices,bacon and cream cheese, then add cheddar cheese. Fold in stiffly beaten whites, cover fingers(not bottom) with mixture. Refrigerate over night. Bake at 400^, 10 to 15 minutes, until golden brown and puffed. Serve hot or cold. Makes about 12 servings.Uses one 1-lb. loaf of bread. Note: Save crusts in freezer bag and freeze for later use in dressing, or breading.
