mom's onion bread

My mom use to make this for my brother and I when we were young. I had forgotten about this recipe until I had an onion roll purchased at Albertsons. This bread is good toasted aside eggs and bacon. Excellent for a my husbands favorite liverwurst and onion sandwich.

Ingredients

  • 2 packages rapid rise yeast
  • 2 cups warm water
  • 1/3 cup sugar
  • 1 package onion soup mix
  • 2 tablespoons molasses
  • 1 - egg
  • 1 teaspoon salt
  • 1/3 cup shortening
  • 5-6 cups ap flour

How To Make mom's onion bread

  • Step 1
    Disolve the 2 packages of yeast in the warm water until yeast proofs ( I do this in my kitchenaid )
  • Step 2
    Once proofed add remaning ingredients except the flour and mix until blended ( I do this with the dough hook attachment )
  • Step 3
    Add 3 cups of flour and mix you will need to add more flour until the dough pulls away from the bowl. I add in 1/2 a cup increments
  • Step 4
    Put the dough in a lightly oiled bowl, cover with a towel and let it rise until double ( mine doubled in an hour. I let me dough rise in my microwave )
  • Step 5
    Once you have reached your first rise punch down and form two loaves and place in your loaf pans. Let the dough rise for the 2nd time until double
  • Step 6
    Brush with melted butter. You can top with whatever you wish or leave it plain. I made one loaf with poppy seeds and 2nd with sesame seeds and dried onions
  • Step 7
    If you are using a glass loaf pan your oven needs to be at 325 and if your are using metal loaf pan your oven needs to be at 350.
  • Step 8
    Bake 45 minutes until your bread is golden brown and let cool on a wire rack
