Italian Zucchini Bread

Ingredients

2 call purpose flour

1 tspsugar

1/2 tspbaking soda

1/2 tspbaking powder

1/2 tspsalt
-
1 tspitalian seasoning or oregano

1/2 tspgarlic powder

1 tspdried minced onion
-
1 cbuttermilk
-
1/2 cbutter, melted
-
2eggs, beaten
-
1 cshredded zucchini
-
1 cshredded mozarella cheese
How to Make Italian Zucchini Bread
- Combine in a large bowl the first 8 dry ingredients.
- Add buttermilk, melted butter and eggs. Stir together with a spoon.
- Fold in the shredded zucchini and mozzarella cheese.
- Spray a 9x5 loaf pan with PAM. (I prefer to use 3 mini loaf pans.)
- Bake in pre-heated 350°oven for 55 - 60 minutes until the center tests done (appx. 40 for the smaller pans).
- Remove from oven and cool for about 10 minutes before removing from pan(s).
