I enjoy a make ahead topping or bread crumb mixture. This will chop preparation time. It's versatile to be used with different recipes. Also, it will stay fresh in an airtight container or, freeze it if you choose. Anytime a meat recipe calls for flour etc, try using this crumb mixture after dipping in beaten eggs.

Ingredients
- 1 cup white bread, run through food processor to crumble
- 1/8 cup plain flour
- 1/4 cup yellow cornmeal, plain or self rising
- 2 tablespoons creole seasoning
- 1/8 cup powdered garlic
- 2 tablespoons dried oregano
- 1 teaspoon dried red pepper flakes
- 2 tablespoons dried basil
- 1/8 teaspoon (pinch) fennel seed
- - black pepper to taste

Step 1Mix well, store in air tight container. Increase recipe for larger recipe needs.

Step 2This is good to batter chicken breast that have been hammered with a mallet to flatten and dipped in beaten eggs. You can fry a short time in heated Olive Oil, med high, then place on a foil covered baking pan. This should be a 9x13 pan with sides. Put tomato sauce and grated white cheese on top. Bake in a preheated 350 degree oven until done 15 -20 minutes, if fried crusty first.
