1 cwhite bread, run through food processor to crumble
1/8 cplain flour
1/4 cyellow cornmeal, plain or self rising
2 Tbspcreole seasoning
1/8 cpowdered garlic
2 Tbspdried oregano
1 tspdried red pepper flakes
2 Tbspdried basil
1/8 tsp(pinch) fennel seed
·black pepper to taste

- Mix well, store in air tight container. Increase recipe for larger recipe needs.
- This is good to batter chicken breast that have been hammered with a mallet to flatten and dipped in beaten eggs. You can fry a short time in heated Olive Oil, med high, then place on a foil covered baking pan. This should be a 9x13 pan with sides. Put tomato sauce and grated white cheese on top. Bake in a preheated 350 degree oven until done 15 -20 minutes, if fried crusty first.
