"This is a very soft dough and freezes well." And she is right - quick and easy and I love that it can be frozen!!! So you have fresh each time you want it.
Stir yeast into warm water until dissolved. Let stand.
In a large bowl of mixer with paddle add flour, cool water, salt, oil and honey -stir in the yeast mixture.
Knead with dough hook for about 5 minutes, or by hand for 7 minutes.
Place dough in a large greased bowl; cover with clean towel- allow to rise 30 minutes.
Punch down and divide into 16 pieces(for individual pizza) or (4 pieces for 16 inch pizzas). Coat each ball of dough in olive oil- wrap in plastic wrap or in freezer ziploc bags and freeze.
Remove from freezer the night before(8-12 hours) using.
Allow to thaw in fridge. Let rise until double in size, then punch down and make pizza or pizzas.
Very soft dough and freezes well!
