Harvard Beets on Italian Toast

Ingredients

4 slicethick italian bread toasted and spread with garlic butter

1/2 cor more mashed harvard beets
-
4 slicefresh mozzarella cheese
-
·sprinkling of minced mint leaves for garnish
-
·olive oil for drizzle on top for garnish
How to Make Harvard Beets on Italian Toast
- Toast and spread garlic butter on bread.
Mash beets and spread on top of toasted bread. Place a slice of cheese on each toast.
Sprinkle with mint, and drizzle with a bit of olive oil. - Place toast on cookie sheet and bake in 400^ oven until cheese melts about 1 minute. Enjoy!
