- 4 slices thick italian bread toasted and spread with garlic butter
- 1/2 cup or more mashed harvard beets
- 4 slices fresh mozzarella cheese
- - sprinkling of minced mint leaves for garnish
- - olive oil for drizzle on top for garnish
How To Make harvard beets on italian toast

Step 1Toast and spread garlic butter on bread. Mash beets and spread on top of toasted bread. Place a slice of cheese on each toast. Sprinkle with mint, and drizzle with a bit of olive oil.

Step 2Place toast on cookie sheet and bake in 400^ oven until cheese melts about 1 minute. Enjoy!
