Ingredients

  • 4 slice
    thick italian bread toasted and spread with garlic butter
  • 1/2 c
    or more mashed harvard beets
  • 4 slice
    fresh mozzarella cheese
  • ·
    sprinkling of minced mint leaves for garnish
  • ·
    olive oil for drizzle on top for garnish

How to Make Harvard Beets on Italian Toast

Step-by-Step

  1. Toast and spread garlic butter on bread.
    Mash beets and spread on top of toasted bread. Place a slice of cheese on each toast.
    Sprinkle with mint, and drizzle with a bit of olive oil.
  2. Place toast on cookie sheet and bake in 400^ oven until cheese melts about 1 minute. Enjoy!
